Sweet Oat and Berry Bowl

Makes 2 servings | Ready in 7 minutes | Stores 5 days in fridge
 

INGREDIENTS

  • ¾ cup apple juice, no added sugar
  • 1½ ripe bananas, peeled
  • ½ teaspoon ground cinnamon
  • ½ teaspoon pure vanilla extract
  • 3 Medjool dates, pitted and halved (optional)
  • 1 cup rolled oats
  • 1 cup fresh berries
  • ½–1 cup walnut pieces

 

DIRECTIONS

  1. Place apple juice, bananas, cinnamon and vanilla extract into a blender. Blend until creamy. Add dates and pulse just a couple times so dates are in small pieces.
  2. Add rolled oats to a small bowl. Pour the banana mixture over the oats. Stir in the berries and walnuts, and enjoy!

 

CHEF’S NOTES

The dates are optional, depending on how sweet you want the dish to be.

To soften the oats, you can make the night before so the oats have time to absorb the liquid. When making ahead of time, leave the nuts and potentially the berries out until serving time. Because the liquid will be absorbed, you may want to stir in a little water or plant-based milk before serving.

I suggest making this in bigger batches to have leftovers for the next couple of days. It’s also a very quick and tasty breakfast for kids.
