Since I was a little kid, watermelon is one fruit I look forward to all winter long. There’s nothing like the refreshingly sweet, juicy taste of watermelon to beat the summer heat!

It always tastes best during the hottest weeks of summer—which is pretty much now—so I thought it time to give you a watermelon twist.

Fruit salad is a common summer dish, but it's so sweet that it can feel like a dessert rather than a side salad.

However, this Watermelon Salad with Cherry tomatoes and Fresh Mint is anything but common.

The watermelon and tomatoes give it sweet juiciness. Tossed with lime for some zest, arugula for a bite, and mint for a refreshing vibe.

Tomato-Watermelon Salad with Arugula

Makes 3 servings | Ready in 20 minutes | Stores 5 days in fridge

 

INGREDIENTS

  • ½ small watermelon, diced (18oz)
  • 2 cups arugula, spinach or mixed greens (4 oz)
  • ½ cup cherry tomatoes, halved (4 oz)
  • 2 tablespoons lime juice
  • 3 tablespoons minced fresh mint
  • ½ cup shelled pistachios, chopped
  • Freshly ground black pepper to taste

 

DIRECTIONS

  1. Add the watermelon, arugula, cherry tomatoes, and lime juice to a large bowl. Toss well.
  2. Chill the salad in the refrigerator for 15 minutes before serving.
  3. Plate the salad. Then sprinkle on the chopped pistachios and black pepper.
