I’ve always wanted to help people savor fresh, whole foods — so nourishment felt joyful, pleasurable, and sustainable. When I learned that umami was the savory flavor we all instinctively love, it quickly became the foundation for a cooking course I began developing.
At the same time, I was living with what felt like my “normal” — brain fog, social anxiety, and chronic tension. I didn’t think anything was wrong; I had already healed so much that I felt great and stayed focused on teaching what I knew.
But beneath the surface, deeper imbalances were quietly building — and excess glutamate was accelerating it all.
Then, over just a few months, everything changed. The glutamate overload tipped me into debilitating anxiety, severe depression, and a profound decline in health.
Because of my background in human biology and a master’s in nutrition, I turned toward the science. I began investigating the neuroscience of umami, glutamate–GABA balance, and how flavor signals safety to the nervous system.
Suddenly, my past and present symptoms made sense — and I realized millions are affected by glutamate imbalance without even knowing it.
That realization changed everything. I knew I had to do flavor differently.
I rebuilt my health — and my joy — by returning to whole-food umami, nourishing my nervous system, and reconnecting to my body’s wisdom.
And as I healed, I realized this wasn’t just about flavor — it was about remembering the body’s natural intelligence, restoring safety to the nervous system, and making healing deliciously embodied.
