Coconutty Banana Bites – Just Roll, Freeze and Enjoy!

Coconutty Banana Bites

Makes sixteen 1-inch balls | Ready in 15 minutes | Stores 1 month in freezer
 

 INGREDIENTS

  • 10 Medjool dates, pitted
  • 1 large banana
  • 1 tablespoon minced fresh ginger (or 1 teaspoon ground)
  • ½ teaspoon ground cinnamon
  • ¾ cup raw almonds
  • ¾ cup raw walnuts
  • ½ cup unsweetened, shredded coconut

 

DIRECTIONS

  1. Add the dates, banana, ginger, and cinnamon to a food processor. Process until it is well combined.
  2. Add the almonds and walnuts. Process further to your desired consistency. If you like more texture, use the pulse button to make sure the mixture is not over-processed.
  3. Line a baking sheet with parchment paper. Form the mix into 1-inch balls, placing them on the parchment paper as you go.
  4. Add the shredded coconut to a small bowl. Add the balls to the bowl a few at a time. Roll the balls in shredded coconut and then place back on the parchment paper.
  5. Put in freezer until set, usually a minimum of a couple of hours. Once the balls, transfer them to an air-tight container or bag. Store in the freezer until you’re ready to enjoy them.

 

CHEF'S NOTES

You may want to double or triple this recipe because you will have a hard time keeping them around! If you make a big batch, be sure to store them in the freezer so they retain their shape and stay fresh.
