Savory Veggie Oatmeal in the AM Lowers Mid-Day Sugar Cravings

This breakfast is outside the mainstream cereal bowl. Of course, oatmeal with fruit is a very popular breakfast in the plant-based world and really all over the world. Aside from it being healthy and satiating, I think people love it so much because of how fast and easy it is to make, and how delicious it is.

Savory Oatmeal with Veggies can be just as easy and delicious! I've actually grown to love the veggie addition even more than the fruit.

When I'm not starting the day with sweetness, even if it's a whole food source, I notice less desire for sweets later in the day.

Plus, starting the day with veggies reminds me of how much I respect my body and my health. It's very empowering to make better choices throughout the day, even outside of the food realm.


Savory Veggie Oatmeal

Makes 2–3 servings | Ready in 10 minutes | Stores 6 days in fridge

 

INGREDIENTS

  • ½ red onion, diced (3 oz)
  • 6 crimini mushrooms, diced (2 oz)
  • 1 small zucchini, sliced in half moons (4 oz)
  • 1½ cups broccoli, diced (3 oz)
  • 2½ cups water
  • 1 cup rolled oats
  • ½ tablespoon tamari (optional)
  • ½ tablespoon curry powder
  • 1 teaspoon ground coriander
  • ½ lemon, juiced

 

DIRECTIONS

  1. Place a large skillet over medium-high heat. Add onion, mushrooms, zucchini, and broccoli. Cover with a lid and dry-sauté for 3 minutes, stirring occasionally.
  2. Add the water and rolled oats. Bring the water to a boil and then turn the heat to low. Let simmer for 4 to 6 minutes until the oats reach your desired consistency.
  3. Stir the tamari, spices, and lemon into the oatmeal. Serve warm.
