Sugar-free Berry Compote

Sugar-free Berry Compote

Makes about 1½ cups | Ready in 15 minutes | Stores 10 days in fridge
 

INGREDIENTS

  • 1 lb berries of your choice (fresh or frozen, with larger pieces sliced in half)
  • 1 teaspoon chia seeds, ground

 

DIRECTIONS

  1. Place half of the sliced strawberries in a saucepan on the stovetop and cover. Cook them at medium-high heat until the juice from the strawberries comes to a light boil, about 3 to 5 minutes. Stir frequently during this time to prevent the strawberries from sticking to the bottom of the pan.
  2. Then remove the lid and turn the heat to low-medium to cook the strawberries at a simmer for a couple minutes.
  3. Transfer the strawberry mixture to a small blender, add the ground chia seeds, and blend into a creamy puree.
  4. Repeat step one with the remaining half of the strawberries. Turn off the heat while the strawberries still have some of their shape.
  5. Stir the strawberry puree into the newly cooked strawberries. Transfer to a small serving dish and let it cool. As the compote sits it will continue to thicken.

 

CHEF’S NOTES

For extra sweetness, either add ½ cup of a fruit juice during step 1 OR add a few diced dates to the strawberries in step 2. Adding fruit juice will increase the simmering time because there will be more liquid to reduce.
